All the technical specs, a 100% rye mash bill, non-climate controlled warehouse, double-barreled, heavy aging, leads you to believe spice is going to be at the forefront of this bottle. Yet, it’s these combined factors that something magical happened.
Working with Tonnellerie Radoux, we slowly toast our barrels over a wood-fired flame before charring. Toasting coaxes sugars from deep in the fibers of the wood which mingle with the distillate during the aging process, giving our whiskeys unparalleled complexity and flavor. Pair these beautifully crafted barrels with the daily 20-50 degree temperature swings, relative lack of humidity, and triple-digit summers, our environment accelerates the aging process and enhances the interaction between the spirit and the wood. This results in a uniquely approachable and refined rye whiskey that defies expectations as one of the least "rye" like ryes.
Developing whiskey takes time. This is not a bottle we put out in distribution and is found only at the distillery. Each batch keeps the same mash bill and production, but every bottling is different. Want to know what batch we’re on? Give us a holler or swing by the Distillery.
