An El Dorado County favorite!
We work with Barsotti Family Juice in Apple Hill to blend of over 30 varietals of fresh apples that we ferment into a cider and begin distilling. After the final hearts cut, we proof to 125 and age in used whiskey barrels. Each batch aged for a minimum of two years up to a maximum of ten years. This results in heavy notes of baking spices, barrel char, and a crisp apple weaving throughout the palate. We never add caramel coloring, sweetening agents or flavorings. Our opinion is you can always add more fruit or sweetness into a drink, but cannot take it away once it’s already in your bottle.
Recommended to drink in a Hot Toddy, Jack Rose, Maple Cardamom Old Fashion, Spiced Cider, neat or on the rocks.
